Jamaican wedding cake
A dark fruit cake soaked in rum and wine, the traditional wedding cake of Jamaica and much of the Caribbean.

The Jamaican wedding cake is a dense, dark fruit cake made with dried fruit that has been soaked for weeks, or even months, in rum and red wine, and baked with burnt sugar and spices. The cake is often iced white on the outside for the wedding. In Trinidad, Guyana and other islands, a similar cake is called black cake. It is shared in slices, packed in boxes for guests, and a top layer may be kept for the first anniversary or a christening. It comes from the British plum pudding, adapted to local rum and fruit.
